Creamy Quesada Pasiega

Quesada pasiega is a delicious cake typical of Cantabria, Spain. The Cantabrian region is known for this creamy cake, reminiscent of a cheesecake. This recipe for quesada pasiega uses ricotta cheese instead of the more traditional cuajada. It is very simple to make and turns out creamy and delicious– perfect topped with some raspberry jam!


  • 7 ounces of ricotta cheese
  • 2 eggs
  • 5 T of unsalted butter at room temperature
  • 1 C sugar
  • 1 C flour
  • 2 t lemon zest
  • 2 C whole milk
  • 1 t vanilla extract
  • Pinch of salt

Instructions for Quesada Pasiega:

  1. First, heat the oven to 350°F (180°C)
  2. In a medium bowl add butter and sugar and cream
  3.  Next, whisk in eggs and vanilla
  4. Add ricotta and a pinch of salt and beat well
  5. Stir in the milk and beat in the flour little by little
  6. Last, add in the lemon zest
  7. In a 9×13 inch baking dish add the mixture
  8. Bake the quesada pasiega for 35 to 45 minutes
  9. When it is brown on top and a toothpick comes out clean it is ready
  10. Cool the quesada pasiega before eating and enjoy either plain or with some jam or fresh fruit on top
