Torrijas: Spanish French Toast


Honey Soaked Torrijas

Torrijas are a delicious Spanish snack that are usually only available around Easter time. Similar to french toast, torrijas are made of slightly stale bread, which is soaked in either milk or wine, covered in beaten egg and fried, and then soaked in honey or sugar syrup. No matter the time of year or the type of torrijas you prefer, torrijas are a delicious snack and the perfect solution for stale bread!


  • 4 eggs
  • 1 quart of whole milk
  • 1 C of sugar
  • 2 t cinnamon
  • 4 T honey
  • Extra Virgin Olive Oil
  • 1 T lemon zest
  • Your preferred bread for making french toast (I like a thick French baguette)

Torrijas Recipe:

  1. Slowly boil the milk, 1/2 C sugar, & lemon zest.
  2. Slice your bread in thick slices.
  3. Boil slowly for about 15 minutes and then turn off the heat and dip the bread slices in the liquid. Get them to absorb as much as possible without breaking apart!
  4. Rest the soaked slices and let them cool off.
  5. Pour the beaten eggs into a shallow bowl or plate and dip the slices in the egg. Heat the olive oil in a heavy pan on medium high.
  6. Fry two slices at a time until crispy (flip half way through).
  7. Rest the torrijas on paper towels.
  8. Mix 1/2 C sugar and the cinnamon in a bowl.
  9. Cover the fried slices with cinnamon and sugar.
  10. Make the syrup by taking the rest of the cinnamon and sugar and adding it to a saucepan with more sugar if necessary to cover the bottom of the pan.
  11. Pour over 2 cups of warm water to the mixture and bring it to a boil.
  12. Add the honey to the sugar water.
  13. Simmer the syrup for 30 minutes, or until it is reduced to a syrup consistency.
  14. Let the syrup cool for 15 minutes before spooing over the torrijas, which should be completely soaked. Let the torrijas cool before putting them in the fridge.
  15. Refridgerate the torrijas overnight.
  16. The torrijas last 3 days maximum in the fridge!
